Exploring food has been one of the most unique parts of my experience in London. Eating is such an important part of human culture, and I think Borough Market is a great example of this. Such a wide variety of people come here to buy delicious street food, fresh produce, fish, meats, and so much more.

One of the biggest “culture shocks” to me was that many British people enjoy raw dairy. I spoke with Joe Hook, the grandson of the founder of Hook & Son, a Borough Market staple that is known for selling unpasteurized dairy products. Hook was happy to share the appeal of raw milk, which was unfamiliar to me since unpasteurized dairy is illegal in Wisconsin. He explained that they have a special license to sell their unpasteurized milk, which is frequently tested for quality and kept to clean and hygienic standards. He went on to say that many British people prefer unpasteurized dairy since it contains bacteria that promote gut health and strengthen the immune system.

While I think I will personally stick to pasteurized milk, I learned that exploring markets in London and simply talking with others about food is a great way to connect with other humans.
